Orecchiette are the emblem of Apulian pasta par excellence, a symbol of local gastronomic culture rooted in peasant wisdom and gestures handed down from generation to generation. Made from durum wheat semolina pasta, they are distinguished by their characteristic shape, similar to a small shell, perfect for receiving and holding the richest and tastiest sauces.
Also called “strascinate” in the local dialect, these little marvels of pasta owe their name to the typical gesture with which they are made: dragged with the thumb or the use of a rounded knife on a pastry board, according to an artisanal rite that retains all the charm of the past.
